Monolaurate de sorbitane, also known as mono-12-octadecenoate, is a hydrophilic non-ionic surfactant that naturally occurs in breast milk, coconut oil, and Abelmoschus esculentus. It is an excellent food emulsifier with an HLB value of 5.2, as well as a safe, efficient, and broad-spectrum antibacterial agent with dual functions in emulsification and preservation.
Use in Food
monolaurate de sorbitane are used in dairy and dairy products that are rich in nutrients and susceptible to microbial contamination, including lactic acid bacteria, amino acid bacteria, lipolytic bacteria, fungi, and pathogenic microorganisms such as Mycobacterium tuberculosis, Brucella, Staphylococcus aureus, Salmonella, Anthrax, and Yersinia enterocolitica.
Use in Baked Goods
Baked goods come in a variety of types, most of which are high in sugar and oil and prone to oxidation and spoilage. Moreover, their high moisture content and rich nutrient composition provide a natural medium for mold growth and reproduction.
Use in Meat and Meat Products
Meat and meat products are rich in protein and have high moisture content, requiring strict storage conditions to prevent microbial growth and spoilage, primarily by bacteria such as Pseudomonas, Bacillus thermos pores, lactic acid bacteria, Escherichia coli, and Listeria monocytogenes.
